The back story here is ❤️ warming. I promoted Maria from #steward to Garde Manger and while she was learning her new station I asked her where she learned this #Hack. Although I taught the cook that taught her. Maria is the STAR ⭐️ here.

So Line them up, baste with hot oil and Once the wontons take shape push them into the oil to finish. If you throw them right into the oil they curl up on you.
