Add Oil... Gently Place your Dayboat Scallops in that hot pan, only move and turn the scallops once. Then once you have a really nice hard sear, on both sides, turn the heat down and add some whole unsalted butter. Tilt the sauté pan towards you and Baste as demonstrated.
