Dry Aging takes planning, critical air circulation, proper humidity and UV lighting. Projecting your sales helps with the process but in the end #DryAging #Beef is well worth the extra investment of time, cost and effort. When you have a dry age room and you're selling $100k of beef a week you'll project your butchering production by aging what loins you'll use. Like a calendar.
