“Hack #9 - Document it All”

Videos, pics, recipes, specs, notes, etc... are all ways of documenting your work as a #Chef. I recently transferred 95k files ( no kidding ) and realized I’ve been very busy over the years.

I call it the hook, line and sinker...

#Giving your team ( FOH & BOH ) time to see the dish, study it’s specs, taste, hear a little story pertaining to the dish and a Q&A segment is “teeing them up” for success and you’re guests will take notice from your team’s confidence.

Since the early 90s I’ve been rolling out seasonal menus 3-4 times a year. The products are seasonal and local, cooks are well trained and that’s going to equate to an excellent guest experience.

To allow your staff time to execute well I run new dishes as features, then fine tune the recipe, take pics, hang the pics and after everyone “knows their stuff” place the documents in a book that I call “The Bible”.
